Moroccan maakouda street food, Moulay Idriss, Middle Atlas, Morocco 2015-06-13.
Maakouda are small, deep-fried potato cakes which have been mashed up with a heavy spoonful of turmeric, chopped cilantro and sautéed onions and garlic. They are generally served up as snacks in paper cones with a heavy coating of a spicy tomato and harissa based sauce, or also added as a filler to sandwiches. Very cheap snack readily available all across Morocco.
