If stigmas are left on the flowers after being picked, they can spoil within 2-3 days. Since this crop is the farmers most important harvest of the year, the saffron is quickly separated, dried and put into optimum storage conditions
Once the saffron threads have all been separated, they are placed onto white tissue paper and air dried under the sun.
Most saffron is dried straight away and placed into disinfected air tight containers, but some is also taken to the markets fresh, as it can be used in cooking and tea fresh and some people prefer to dry the saffron themselves using their own methods.
