‘Bessara’ - a Moroccan soup made with dried fava beans, Marrakech Medina, Morocco 2018-04-08.

This subtly flavoured soup is traditionally made with dried, split fava beans, but is even better when fresh beans are in season. The secret to a good bessara is all in the seasoning; it is only lightly spiced and seasoned while cooking, leaving the real flavour to the final touches; a heavy drizzle of pure olive oil, slithers of raw garlic and sprinkles of freshly ground cumin, paprika, salt and chopped chillis are added before eating.
