Tetouan Medina, Northern Morocco
Moroccan chebekia and birouat street food stall, Tetouan, Rif region of Northern Morocco, 2016-04-05.
Chebakia is a sweet dough pastry infused with rosewater rolled to resemble a rose, deep fried until golden, glazed with generous amounts of honey and sprinkled with toasted seasame seeds.
Briouats can be sweet or savoury and the term generally refers to small pastry parcels which are deep fried and this instance, glazed with honey and sprinkled with toasted seasame seeds. The sweet version birouats are often filled a sweetened almond and rosewater paste in the centre.
