The aroma of the mixture of spices coming from ‘escargot’ stands up and down the streets of Morocco is alluring for some, but equally off-putting for others.
Involving a very unique blend of spices consisting of; thyme, mint, bitter orange peel, pepper, liquorice root and crushed arabic gum (made from acacia trees), the dish creates a fragrant aroma to the street surrounding each stall.
The delicacy is eaten all over Morocco but is especially easy to find in Jemaa el-Fna, the main square of Marrakesh, where street food is abundant.
