Bessara Soup, Moulay Idriss, Morocco
‘Bessara’ - a Moroccan soup made with dried fava beans, Moulay Idriss, Middle Atlas, Morocco 2016-04-28.
Mostly found up north in the Rif and Middle Atlas regions, this subtly flavoured soup is traditionally made with dried, split fava beans, but is even better when fresh beans are in season. The secret to a good bessara is all in the seasoning; it is only lightly spiced and seasoned while cooking, leaving the real flavour to the final touches; a drizzle of olive oil, slithers of raw garlic and sprinkles of freshly ground cumin, paprika and freshly chopped chillis are added before eating.
